Mumbai Pav Recipe (Ladi Pav)

Ingredients (for 6 pavs):
- 1.5 cups bread flour (12.7% protein content)
- 0.5 cups whole milk
- 0.25 cups sugar
- 0.5 whole egg (optional but recommended)
- 2 tablespoons butter
- 1.25 tablespoons yeast (1 packet or 2¼ teaspoons)
- 0.5 teaspoon salt
Basic Preparation Steps:
- Activate yeast with lukewarm milk and sugar (5 minutes)
- Mix with flour and remaining sugar, knead (5 minutes)
- Add egg, salt, and butter, continue kneading (5 minutes)
- First rise - first hour (1 hour)
- First rise - second hour (1 hour)
- Punch dough and divide (10 minutes)
- Second rise (1 hour)
- Brush with milk and preheat oven (15 minutes)
- Bake at 375°F (20-25 minutes)
- Brush with butter and rest (10 minutes)
